Farm lady says, worth every penny
I hesitated to spend this kind of money on....well, anything really. I read reviews of all different kinds for hours. I own and operate a small farm with about 100 diversified fruit trees and I hate seeing wasted food. So all the imperfect fruits go into my summer preserves for friends and family. I'm picky about my jams, I use the classic pectin-free methods recommended by Blue Chair Fruit Co. in Oakland, CA.....who in turn endorse these pans. It is not unusual for me to face needing to process 30 lbs of fruit at a time, week after week, in summer. I have been scalded by hot jams over and over as I cooked batches on aluminum, steel, Calphalon, teflon pans or pots. The final straw came when a splash of scalding jam missed my eye by a quarter inch. I ordered this. Yes there were cheaper kinds out there, but I realized after researching that the price was directly related to the amount of copper in the pan, and therefore how heavy and conductive the cooking surface would be. When this came, I already had a macerated batch of fruit ready to go. I simply could not believe it. For the first time ever the recipe behaved as the cookbooks said it should. I could stir gently and consistently with zero splashing, all I had to do was get the gas setting on the burner just right. I processed four batches in a row in the time it took me usually to make two....and the flavor was better, and the color of the fruit was brighter because the cooking time was reduced so much. When the batch was finished, not a whisper of a hint of a scorch mark on the bottom, as shown in the photos. This was an unusually large batch, one that I did as an experiment. The handles do heat up but they heated up on the other kinds of pans as well, use oven mitts. I ordered the 15 qt size because of the volumes with which I work. Perhaps for a more occasional cook, the 11 qt model would suit fine. I cannot recommend this beautiful and functional piece of cookware enough, it has transformed a summertime job from misery to joy.

Beautiful product. Terrible packaging
Beautiful copper pan and works perfectly. No complaints on the product. However, like other reviews, the packaging it came in was substandard. The box had fallen apart and the pan was only wrapped in a paper bag. There was no padding to protect it and with such a heavy product, without some padding it is bound to get dents in it during shipping. Mine has several dents at the base of the pan. It is not worth getting them to reship another one as I assume it would arrive the same way. Amazon really needs to do better in protecting such an expensive item.

Much heavier (that's good) than I expected
This pan is great. I bought it as a gift and am tempted to buy another one for myself. It is twice as heavy as the similar pan I have that motivated me to buy it for a gift. The copper distributes the heat so well that as far as I can tell I haven't been able to burn anything when I am making jam. With other non copper pans I have had to stir constantly or the fruit gets burned.

VERY WELL MADE, HEAVY WAIGHT AS IT SHOULD BE, AMAZING PRODUCT
We just received our parcel, very well made and very good packaging for heavy item. Item is very heavy as it should be. My dream come true for making jams in appropriate copper pan, as my grandma did.Thanks for amazing product.

Ordered new, received used
I ordered a new one but I received a returned one, which had been offered at a lower price. I would have had to return it anyway, because, however good a copper jam pan, the one I received was too big to fit any of the burners on my home range -- it was so large it took up most of the cooktop. I wanted it more for making pralines than for making jam, but it would still have been too big as my biggest jam recipe makes fewer than a dozen pints. I wouldn't have had enough praline syrup for the thermometer to measure accurately. I didn't measure the capacity, but I was left wondering if I'd had received the larger version instead of the one I ordered. At any rate, I did not receive the one I ordered.

It's a thing of beauty; Love it!
This Mauviel M'Passion jam pan is so beautiful I almost didn't want to cook in it. It looks better in real life than in the picture. I have made two batches of jam in it and both turned out great. The pan weighs 7 lbs, 7.6 oz. according to my kitchen scale. The walls of the pan seem to be about 1/16th inch thick and the bottom might be thicker. It cleans up easily. It seems very expensive but with the price of copper and the fact that it is hand hammered and shipped from France, it would be hard for it to be priced lower. It was also packaged very well for shipment. This is a splurge for me but well worth it . . . less than the price of one of the many handbags that will be out of style next year! ; - )

Fantastic Jam Pan
The shape and material of this pan make the cooking down of sugared fruit effortless. The time required to boil is cut significantly, making the end product much more vibrant. The size of the pan is perfect for 6-8 half pint batches. Well worth the money if you make jam, jelly or marmalade two to three times a year or more. Copper is heavy and thick (1.2mm), but responds to changes in heat dramatically. When you lift the pot off the heat it stops boiling almost instantaneously. And when you lower or raise the heat, your change in temp is transferred to the pot very quickly.

Splendida, pur nella sua imperfezione.
È bellissima e pesante.Davvero grande: nella foto è accanto a una bottiglia d'acqua da 1 litro e mezzo, per rendere l'idea.Per me, fin troppo grande. Vero che non riempirla del tutto consente di evitare gli schizzi, ma ci vuole davvero una grande quantità di frutta per riempirla anche solo a metà.Quattro stelle perché, anche se mi piace molto e non intendo restituirla, è ammaccata, per fortuna non sul fondo, ma in corrispondenza della maniglia, come se fosse caduta sulla maniglia e si fosse deformata verso l'interno. Niente di grave ma, unitamente al fatto che in molte altre recensioni si denunciano ammaccature, mi fa pensare che Amazon stia vendendo pezzi di vecchie produzioni Mauviel (la serie attuale ha le maniglie diverse e il marchio impresso per esteso sulla maniglia) che non hanno passato il controllo qualità.In ogni caso, ripeto, una pentola davvero bella.
